Abbey beers

As the designation " bière d'Abbaye" ( abbey beer) has always been synonymous with quality and tradition, many breweries have used it. In fact these beers are not brewed by monks. Some even carry the names of abbey which have never existed. The term abbey may indicate that the beer is brewed in the way used by monks, that there is an abbey nearby or, simply, that there is a monk on the label. These beers have no specific characteristics. In the last few years, a new category of Abbey beers has appeared. These are beers produced by a private brewery, installed within the confines of a abbey deserted by the original occupants in the past ( Abbaye des Rocs, Val Dieu, Abbaye d'Aulne...)

St-Feuillien Quadruple is a very dark and dense beer. She is noticeably alcoholic. She dis- tinguishes herself by a complex and finely caramelized aroma and with shades of Madeira wine and candied fruit and an intense touch of fermentation esters (banana type). A slight hoppy smell (English style) completes the whole. The mouth is long with a powerful body built on the density and generous apparent extract. The bitterness is present but sweet and blends harmoniously with the malty struc- ture. The selection of special malts raises the chocolate side with the nuances of coconut. The saturation is average.

This beer, from Val de Sambre brewery and delivered worldwide, is a dark, slightly copper coloured top-fermented beer. The beer has been made with the best malts and aromas. The head is quite dark and consistent and tastes like caramel and there is even a bit of cumin in it. The best temperature to drink the beer is between 10 and 12° C. The beer can be served with refined dishes such as foie gras, duck breast and why not with a good cigar.

Produced by Leroy breweries, and delivered worldwide, Kapittel Tripel Abt 10° is an amber-coloured high-fermentation tripel beer, which undergoes secondary fermentation in the bottle. This tripel has a full and complex range of flavours. It has been described as full-bodied, slightly hoppy but not bitter, tending towards a slightly sweet flavour. The unpleasant taste of alcohol has been replaced by a warm mouthfeel.
