The Oude Geuze (7 % alc.) consists of soft lambic aged 18 months (90 %), a character beer aged 3 years (5 %) and very young lambic beer (5 %) which provides fermentable sugars and viable yeast. This mix is made in a cooled tank of 25,000 litres. The Oude Geuze ripes in oak barrels. Before bottling, the geuze is given back its fermentation temperature in order to undergo a second fermentation.
