

This abbey beer is currently brewed at Scourmont Abbey, due to a lack of premises available at Mont des Cats Abbey. According to Brother Marie “It is a Trappist beer brewed in a Trappist abbey according to a Trappist recipe. (...) Maybe one day we will consider building a brewery. "
Renowned for its cheese, a pure tradition of the Cistercian abbeys of northern Europe, the Abbey hopes to breathe new life into this Trappist beer, the only French Trappist beer. * A Trappist beer is served in a “chalice” type glass (due to the associated religious symbolism), which is why the Monts des Cats chalice glass is preferred. Some amateurs prefer to serve them in a tulip glass (narrower at the top) in order to better concentrate the aromas.

“French” trappist beer brewed by Chimay for the French order in order to aid them monetary. In the future they might begin to start producing this beer themselves but this is quite long-term and uncertain. Pours a dark amber / brown with a fluffy white head – bit of an surprise for me because for some odd reason I always assumed that this is a blond beer. This is quite sweet and sticky, malty with sticky caramel, light syrup, toffee, definite BE profile, quite a bit of sweet spices, light bread, light bitterness in the pack from the spices, brown sugar. Body is a touch too fizzy & touch too light. Quite a nice Belgian Ale – better than expected.
