In the glass, this Belgian beer with an orange colour and fine foam has a very specific taste that holds the middle between apple and lemon.
Like most handcrafted gueuzes, it is possible to let them mature even longer in order to diminish the acidity and to enjoy its fruity aromes to the fullest extent.

The Geuze Mariage Parfait (8 % alc) is a merge of soft lambic beer (95 %) with at least 3 years of age and young lambic beer (5 %). This young lambic provides viable yeast and fermentable sugars. The two beers are mixed in a container of 25,000 litres, after which it is clarified and kept cool. During bottling, the lambic gets back its fermentation temperature and undergoes a fermentation before maturing at a low temperature for at least six months. The Oude Geuze (7 % alc.) consists of soft lambic aged 18 months (90 %), a character beer aged 3 years (5 %) and very young lambic beer (5 %) which provides fermentable sugars and viable yeast. This mix is made in a cooled tank of 25,000 litres. The Oude Geuze ripes in oak barrels. Before bottling, the geuze is given back its fermentation temperature in order to undergo a second fermentation. After bottling in an air conditioned room, the ripening of several months takes off to develop its delicate flavour.
