The challenge is to combine roundness in the mouth and a degree of fermentation of almost 100%.
The light color, the balanced acidity and the taste of green apple and grapefruit as well as a long dry taste in mouth characterize this gueuze. The lambic used for this mixture has matured for 1,2 and 3 years in oak barrels.
