Spencer is an exceptional beer brewed by the monks of Saint Joseph's Abbey in Massachusetts. We find in this recipe the obvious inspiration of the famous Belgian Trappist beers.
This Spencer is a full-bodied beer with a coppery blonde robe on which a thick and frothy foam neck thrones.
From the glass, familiar scents emerge, fruity accents masked by a veil of typically Belgian yeast.
The palate is elegant and the dense body coats the palate with complex flavors evoking white flowers, dried apricots, banana, honey, caramel ... The dry finish on the yeast and slightly bitter prolongs the tasting.
Inspired by traditional refectory ales brewed by monks for the monks’ table, Spencer is a full-bodied, golden-hued Trappist ale with fruit accents, a dry finish and light hop bitterness. St. Joseph’s Abbey in Spenser, Massachusetts, is home to a community of Trappist monks and the first American Trappist brewery. Following the Benedictine tradition of ora et labor (prayer and work), the monks pursue a simple life of contemplative prayer, a manual labor and hospitality. The brewery helps support the monks and their charitable outreach. Pours gold with big bubbles and head and lace. Aroma of Belgian yeast, bready malt, pears, apricots, light fruits, lemon. The flavour is sweet malt, yeast, mild hops, raisins and some dryness. The strong carbonation is making the enjoyment a bit hard. Nice and clean belgian ale!
