A traditional saison style now made only at Blaugies, using barley and spelt ("epeautre"), a primitive strain of wheat. Medium golden color with a massive beaten egg white head that is retained. Aroma is wonderful. Very fruiy/estery with some champagne like charachteristics. Also, somewhat reminiscent of wheat beers as there is some light banana aroma as well. Flavor is more estery; yeast than the aroma presaged. Highly carbonated. Very enjoyable beer. Especially appropriate during the warmer weather IMO.
