The Cantillon Brewery is closely linked to Brussels whose symbol is the Iris flower. As the name implies, the "marsh iris" is a plant that grows in humid environments. The historic center of Brussels is built on swamps where this flower abounded.
Although being spontaneous fermentation, Iris is very different from Lambic. Its amber color, its bitter and slightly caramelized taste make it a beer with complex nuances.
Pours hazy peach amber a small beige head. Aroma is very sweet and fruity but also tart and sour. Very nice. Flavor is acidy sour and a bit tart with nice fruity tones. Palate is sour. Finishes sour acidy and tart with some fruity notes left in my mouth. Very nice lambic.
