Blend of 1, 2 and 3 year old lambic. Fermented and lagered in oak vessels. This beer has no head, just like lambic. The lambic is brewed with 60% barley, 40% wheat, last years hop Golden orange and still, which is nice. A touch of rotten fruit kicks off the aroma, quickly followed by plenty of wet hay and wooden crates long sat in a cellar. In the mouth a lovely tart grapefruit chord plays gracefully beside some wild funkiness. Some umami meatiness lightly fill sin the middle palate while checy, puckering tannins make up the sour finish. Superb!
