Recipe - Waffle of Liège

PREPARATION OF LEAVEN (12 hours in advance):
Mix all ingredients to obtain a smooth and homogeneous paste. Place in a bowl covered with plastic wrap and let stand at room temperature (at least 20 ° C) for 12 hours.
PREPARE THE PASTE:
Put the flour, butter, eggs, vanilla and sourdough in the mixer bowl. Knead at low speed using the hook. Add the yeast dissolved in the warm milk. Mix for 1 minute, then add salt and caster sugar. Knead at high speed until the dough comes off the bowl (5-7 minutes).
Add the pearl sugar. Mix quickly for 30 seconds, then allow the dough to rest for 20 minutes. Divide the
dough into several 120g balls. Place them on a lightly oiled sheet and cover with a damp cloth. Let the dough rise at room temperature (at least 20 ° C) for 20 to 30 minutes.
Meanwhile, preheat the waffle iron. Oil with a neutral oil and cook the waffles for 2-3 minutes, or until you get a nice color. Let cool and enjoy!
